Today we’re going to cook white asparagus for baby. Asparagus is rich in antioxidants and vitamins, making it a great choice for babies starting at 8 months!
Recipe with asparagus for baby
We are going to prepare a little recipe with trout, which we will give to baby from 9 months.
We will also add lemon, which goes well with both asparagus and fish. A touch of freshly chopped chives will be mixed into our puree. We will use potatoes to add starch and soften the dish. It will all come together to create a superb puree that baby will love!
Note for those who don’t know: after eating asparagus, baby’s urine may have a strong smell. Don’t worry, it’s perfectly normal. Try it yourself, the same thing will happen!
Here’s what you’ll need to make this asparagus, chives, lemon, and trout puree recipe for baby (9 months, yields approximately 7 ounces / 200g):
Ingredients
- 4 ounces white asparagus (110g)
- 2.8 ounces potatoes (80g)
- 0.7 ounces trout (20g)
- 0.2 fl oz lemon juice (5ml)
- 1 teaspoon chopped chives
- 1 small teaspoon olive oil
Preparation
We’ll start this recipe with the potatoes. Wash them, peel them, and cut them into thin slices.
Cooking
Then place them in our steamer basket and start cooking. In a pressure cooker, I counted 4 minutes. With steam, it takes about 5 minutes. Let’s go!
Meanwhile, let’s take care of our asparagus. Wash them and cut approximately 3.2 inches from the tip of each asparagus. The tips of asparagus are very tender (and have a better texture) and are better than the rest of the asparagus. However, there’s no harm in eating the whole asparagus, which is still delicious!
Next, we’ll peel our asparagus tips: we’ll peel off the entire white part to remove a thin layer of the asparagus.
Once the potatoes are cooked, we can add our asparagus tips to the steamer basket with the potatoes and start cooking again. Let’s steam for 6 minutes in a pressure cooker. With steam, it takes about 10 minutes! Let’s go!
Meanwhile, let’s take care of our trout. It’s best to go to the fishmonger to get fresh fish, prepared without skin and bones!
If you couldn’t find a prepared piece, gently remove the skin by sliding a knife between the flesh and the skin. Make sure to remove all the bones! They are mainly found in the center of the piece in this photo. Don’t hesitate to use your fingers several times to make sure you’ve removed them all!
Then, cut the flesh into approximately 0.6-inch cubes.
Once our vegetables are cooked, we’ll use the existing steam. So, we add the trout to our vegetables and let it cook covered, with the heat off (lid closed for the pressure cooker) for about 5 minutes. Let’s go!
Now we just need to wash our chives and finely chop them.
Then squeeze about 0.1 fl oz of lemon juice.
Place the cooked vegetables and fish in the blender with the lemon juice and a small teaspoon of olive oil. Add a little cooking water if you find it too thick. Blend, leaving some texture.
Next, add the chopped chives to the obtained puree and mix.
