Today, I felt like sharing a recipe again. And it’s with this incredibly popular cauliflower in tomato sauce with feta that I’m starting! 🙂
Cauliflower in tomato sauce, feta, parsley, and rice recipe for babies and the whole family (from 12 months)
This recipe is truly a favorite at home. It’s incredibly satisfying, allowing children (and parents!) to discover cauliflower in a different way (rather than just in gratins as is often the case), and the flavors blend perfectly: feta and parsley season it royally!
Some rice to accompany this cauliflower in tomato sauce, to balance it out with stronger flavors, and you’re good to go.
So, here’s my Cauliflower in tomato sauce, feta, parsley, and rice recipe for babies and the whole family (from 12 months, serves 2 adults and 2 children):
Ingredients
- 1 minced onion
- 1 small minced garlic clove
- 14 oz (400ml) tomato pulp (or crushed tomatoes or peeled tomatoes)
- 17.6 oz (500g) cauliflower florets
- A few leaves of fresh parsley
- A few cubes of feta (adjust to taste)
Preparation
Start by steaming the cauliflower for 8 minutes. It should be tender, perfect for continuing its cooking in the tomato sauce.
Cooking
Meanwhile, cook the rice according to the instructions on the package.
In parallel, sauté the onion and garlic over medium heat in a little cooking oil in a pan for a few minutes, stirring occasionally.
Add the tomato pulp and a little water to the pan, mix, and simmer for a few minutes. There should be a gentle simmer.
You can blend the tomato pulp to make it smoother before adding the other ingredients, depending on your preference. It removes some texture, and the flavor of the onion becomes more prominent, which is excellent, but some prefer to leave it as is.
Once the cauliflower is cooked, add it to the tomato sauce with the freshly washed and minced parsley, and mix well. You can adjust the consistency of the tomato sauce by adding a little more water or simmering to thicken it. Mix well.
Distribute the cubes of feta in the pan and simmer for another 5 minutes.
Serve the rice, sprinkle some fresh parsley on top, and season with salt and pepper in each plate according to age and taste, but be careful as feta is already quite salty. 🙂
